Kulinář by Jakub Krotil

You will have seen cook Jakub in Pasta Fresca for the past six years. He loves Italian cuisine, and hasn’t wanted to cook anything else since his apprenticeship. This time he will marry Czech ingredients to Italian techniques to show you how perfectly they complement each other. Štěpán Kubát, sous-chef of Café Savoy, often searches for inspiration in old Czech recipe books. The legacy of Magdalena Dobromila Rettigová, Czech revivalist and author of the still-acclaimed A Household Cookery Book, also left an impression on his Kulinář event. You are invited to a dinner menu at Café Savoy on Wednesday 7 August and on Thursday 8 August:

Kulinář by Jakub Novák

Jakub Novák from Lokál U Bílé kuželky takes the baton of chefs who want to show you their talent. He’s been cooking in Kuželka for five years now, and worked his way up to chef last year. Jakub knows his local customers well, and knows that among their favorite dishes is roast duck with cabbage and dumplings.

The menu of his Kulinář event – which will run from Tuesday 16 July until Friday 19 July – is actually based on it:

  • Duck pâté
  • Soup from black salsify with smoked duck breast
  • Traditional south Moravian potato pancake with shredded duck, red cabbage and fennel
  • Marinated pear with cream and vanilla ice cream

We have entrusted this year’s Kulinář events to talents who want to share their ideas with you.

Katka is a free spirit. At age 20, she spontaneously moved to Berlin, where she and her friends opened a bistro. A year ago, she brought to Prague her experience from Noma in Copenhagen – four-time winner of best restaurant in the world. Meet the sous chef of Eska, and the author of the spring menu, Kateřina Jakusová.

On Wednesday, 24 April and Thursday, 25 April, she will prepare for you:

Your holiday is getting closer

The summer holidays are still a long way off, but you can indulge yourself in a little escape to Croatia in the meantime. The chef of the Café Savoy, Michal Mlejnek, has decided to serve you summer on a plate already now in April. Assisted by his Croatian colleagues, general manager Ozren Vlahov and creative chef Saša Pavlovič, he has created for you an authentic Croatian menu.

Stop by at the Café Savoy between the 9th and 11th of April at either 6:00, 7:00 or 8:00 p.m.

Served will be the following:

  • Dalmatian prosciutto, ajvar, sardine pâté, Paski cheese, olives,
  • octopus salad,
  • stuffed calamari, mangold, potatoes,

Some things just don’t change

Like the certainty that a Saturday follows a Friday, or venison on the autumn table. And we are happy about it! Wielding the venison scepter this time is our Lokál Nad Stromovkou restaurant. From Tuesday 24th to Friday 27th October, there will be a three-course autumn menu prepared for you, the author of which is our chef Jindřich Štolba. Dinner will take place from 6 p.m. to 8 p.m. during this time.

Wine first

We like to do things differently at Eska. For the whole of next week, you are invited to enjoy evenings with exceptional wines that we have paired with an autumn degustation menu that has been specially created to match the wines. We were able to select wines thanks to the Coravin method. We don’t need to know how many guests we are going to serve, because, in fact, we don’t open a bottle if we use the Coravin system. 

What exceptional wines are you going to taste? 

  • Nuits Saint-Georges 1er Cru 2007, Domaine Michel Noellat et Fils and Meursault 1er Cru 2007, Domaine Alain Patriarche were last bottles that we bought from the supplier. Older years of Burgundy wines are very hard to get, but in this case we were lucky.
    Paired courses:
    Roast venison tenderloin, pickled plums, brown butter, juniper berries
    Braised white cabbage, Prague ham, cabbage, marjoram
  • Fresh orange wine Oslavje 2009, Radikon, Friuli is a top premium wine of the Radikon Venezia winery.
    Paired course:
    Leavened potato pancake, mushrooms, needles, wild garlic
  • Riesling 2008, Nikolaihof, Wachau was made in one of the oldest wineries in Austria. Some of their cellars are even from the era of the Roman Empire.
    Paired course:
    Salmon trout baked with salt, celery, buttermilk, cranberries
  • And to finish comes the vintage Champagne Fleury 1995. Robert Fleury is one of the best biodynamic winemakers in the Champagne region.
    Paired course:
    Farmhouse milk ice cream, honey, caramel, chamomile
The menu will be available from 2nd to 6th October at Eska, each day from 7 p.m. There will be only 10 seats reserved for each of the evenings.

The price of the menu paired with wine is CZK 2255, pairing with soft drink CZK 1185.

We are on fire!

This time, they seized the element of fire at Pizza Nuova and came up with a fresh menu that will whet your appetite for the grilling season and is cooked in a flash. The chef, Radek Pecko, will be ready to fire up the grill from Monday 29th May to Thursday 1st June at 6 p.m.

And here is what you can expect:

  • Deep-fried seafood with rocket salad, Piccadilly tomatoes and mayonnaise with Sorrento lemon juice

A slightly different kind of spring

Spring menus are everywhere you look. The kitchen staff at Lokál U Bílé kuželky therefore decided to offer something slightly different. Seasonal ingredients are the basis – what differs is the idea. A potato soup for example: the chef Petr Benda substituted morel mushrooms for bolete mushrooms and wild garlic for regular garlic, he puréed the vegetables and baked potatoes in marjoram ashes. 

Come taste our menu from Monday 15th to Friday 19th May. We can make a table reservation for you for the time between 6 and 8 p.m. 

On your plate will be the following:

  • spring potato soup,
  • flank steak with spring herbs, asparagus and radishes,
  • rhubarb ice cream.

And the club price? 275 crowns.

They were already brought to Europe in the 16th century, but are still hard to find in the shops nowadays. What a pity! Fish, fish, fishermen go!

Carp or trout with cumin are common fish dishes in Czech cuisine. How about trying out something else? The chefs Petr Benda and Sláva Grigoryk have prepared an unusual fish menu for you at Lokál U Bílé kuželky. Fish, fresh from a pond, are supplied to our restaurant by Mr. Kalenda from Chabrybárna.

From Monday 21st to Friday 25th November, the following will swim up to the table every day from 6 p.m.:

Ducks will be flown  to us from the well-known supplier Filip Töpfer, who gets them from Hungary, and as soon as they reach the hands of the chef Roman Frencl at Café Savoy, they will be transformed into a 4-course menu. Somewhere between two seasons

Mornings are already chilly, but by the afternoon you are carrying your coat in your hand – it seems as if the weather can’t decide what it’s doing. We took inspiration from the whimsical weather pattern to create a menu that you can try out at Pastacaffé Vězeňská from Tuesday, September 27th, until Friday, September 30th, every day from 6 p.m. The first two courses are full of autumn ingredients, whilst the dessert brings back memories of summer.

Where has the rabbit gone?

It was pretty common to see rabbit on our plates in the past, but nowadays it is served less and less often. That’s a real pity! The staff at Lokál U Bílé kuželky, with the head chef Petr Benda, have decided to show you how delicious rabbit can be. Come over and enjoy our rabbit menu every day from Tuesday 14th to Friday 17th of June, from 6 p.m.

The whole place is going to be filled with the smell of:

  • rabbit liver on a toast,
  • double rabbit broth with yeast dumplings,

The butchers Pavel Novotný and David Michal and the chef Pavel Straka will prepare specialities from a well-fed “Přeštice” pig for you – traditional soup, goulash, white pudding, black pudding, boiled pork, brawn, grilled pork chops, crackling, schnitzels and grilled pork neck. What does a forest on a plate taste like?

What are the use of rain and storms? They mean the mushroom season has begun! Even better news is that at Čestr we now offer a six-course menu full of mushrooms and other interesting tastes from the forest, prepared for you by our chef Pavel Straka. We are looking forward to your visit!

What is there to enjoy?

  • Beef carpaccio with mushroom glaze, mushroom mayonnaise, mushrooms in sour sauce and blackberries garnished with sorrel and pine needles in sour sauce
  • “Kulajda” soup with potato baked in ash, lightly boiled egg, mushrooms and fresh dill

The Battle of Three Beers

The master bartender Lukáš Svoboda and Tomáš Hrnčíř from the Lokál U Bílé kuželky restaurant invite you to the second battle of small and large breweries.

They have selected three different beers that have been carefully treated using our methods and they will pour them using three styles - mlíko (sweet), šnyt (slice) and hladinka (cream). The taste test will be accompanied by sausage made from "Přeštice" pig from our butchery and homemade bread.

The Battle of Three Beers

The Lokál U Bílé kuželky restaurant will host the first battle of small and large breweries. The event will be held under the direction of Master Bartender Lukáš Svoboda.

You will do a blind taste test of three different beers selected by Lukáš Svoboda
and carefully treated using our methods. We will pour the beers using three
styles: mlíko (sweet), šnyt (slice) and hladinka (cream). At the end you will see
which one you like the most. The taste test will be accompanied by Prague Ham made from Prestice pigs and homemade bread.

From Thursday 18th April until Saturday 20th April, starting at 5:30 PM
The club price of the beer tasting, which includes a meal, is CZK 270 per person.

The event will last one a half hours. The number of places is limited to 8.

The first pork feast at Čestr!

You are warmly invited to a Přeštice pork feast led by the Dupal father and son master butchers from Luka pod Medníkem.

From 11 a.m. until 5 p.m. on Saturday, 16th February, in the garden
in front of the Čestr Restaurant.

Together with chef Vlasta Lacina Jiroš our master butchers will prepare pig-feast goulash and soup, white pudding, black pudding, boiled pig, brawn, grilled chops, scraps, leg of pork cutlets, and roasted or grilled pork neck.

For you the “all-you-can-eat” club price is 150 CZK per person.

The Best of Brazil!

You are warmly invited to the Brasileiro restaurant U Radnice, where the sommelier Jan Baštinec and the chef Martin Matys prepared pairing Brazilian wines with dishes.

The best from the winery Casa Valduga, Volpi, Salton, Miolo and Lidio Carraro will be accompanied by grilled Uruguayan Marucho, Alcatra, Picanha, Brazilian Cupim, stuffed pão, baked salmon with passion fruit sauce, poached shrimp in the Sauvignon blanc wine, chicken hearts, mango sorbet.

We start the tasting with special Caipirinha and finish it by sabrage a bottle of Brazilian sparkling wine.

The tasting takes place on the 4th and 5th February at 7 p.m. in the upper part of the restaurant.
The club price of wine and food tasting is 665 CZK per person.
